Hatch Green Chile Cream Sauce

It's that time of year, and the Hatch chiles are arriving all over the country. I picked up a bag at the store the other day and have been inventing ways to use them ever since. This one is a nice easy creamy sauce to make to top chicken, pork or enchiladas. The bright, fresh scent of the Hatch chiles really permeate this sauce. Makes a nice clean finish, never bitter.

  • 2 large Hatch chiles, medium heat
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • Juice of 1 lemon
  • 1/2 Tsp. salt
  • 1/2 Tsp. white pepper
  • 1/4 Tsp. garlic poweder

Puree all ingredients in a blender or food processor until smooth. Chill in the refrigerator overnight.

This sauce tastes like awesome. We tried it last night with some carnitas and it was perfect. I think it'd even make a good salad dressing if you were so inclined. We had to opt for Anaheim peppers (no Hatch peppers available out here), but it was still very tasty.

My husband & I live in Washington State.

During a visit to Arizona a few years ago, we purchased a couple jars of Hatch Creamy Green Chili
cooking sauce. It was fabulous ! We couldn't find
it this year & are wondering where we might find some in our area. We would order a case of it if necessary. I just love cutting pork spare ribs into
cubes, adding some onion & garlic & a can of chopped
green chiles a jar of your sauce & cooking until the
pork is tender. Add some corn tortilla & yum yum.
Please help me find some. The enchalada sauce is
to spicy for us.
