Rock Cornish Hens with Ginger Peach Glaze

Cornish Hens with Ginger-Peach Glaze

These are two cornish hens that I grilled on the Char-Broil/TEC grill. The glaze goes on near the end of cooking. Since the hens are pretty big, I seared them on both sides for 5 minutes each over medium heat. Then, I put them up on the warming rack, but kept the grill around 350 degrees. All in all, the cooking time was about 50 minutes.

  • 1/2 cup peach jam
  • 1 TBSP Fresh ginger root, grated
  • 1/4 cup honey
  • 1 TBSP Olive oil
  • 1 TBSP lemon juice
  • pinch salt

Whisk all ingredients together in a bowl. If the mixture is too thick, add a little bit more of the olive oil. You want to make the glaze about the thickness of thin molasses. Set the glaze in the refrigerator for 1 hour to let the flavors marry. This will give plenty of time for the ginger to flavorize the peach jam.

Glaze your grilled chicken or pork near the end of cooking.
