Leftover Grilled Chicken Omelette

It's not the most elegant looking omelette in the world. Definitely not worthy of the Four Seasons. But when you're hungry as hell, or perhaps you're dying of a massive hangover, you just might find some comfort in the leftovers in your fridge. In our case, I'm using some leftover grilled chicken thighs that had been marinated in a chipotle-lime sauce.

Ingredients
- 1/4 cup grilled chicken, chopped
- 2 TBSP Hot Salsa
- 2 Eggs, beaten
- 1 TBSP Butter
- shredded cheese

Heat your omelette pan over medium-high heat. Add the butter and let it melt. Add the chicken and stir fry for a minute. Then add the salsa and mix it through. Now comes the delicat dance that is making the omelette.

Add the beaten eggs and wait. You want to wait until the center of the omelette is just underdone then either flip or fold inwards. Today's omelette was a half-fold. Either way, fold or flip and let it continue cooking.

Turn it out on a plate and add cheese and salsa.
