Wild Rice Pilaf with Goat Cheese and Cranberries

Ingredients:
- Dry Wild Rice
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts
- Dash each of salt and black pepper
- 2-3 spoonfuls crumbled goat cheese
- 1 TBSP butter
Cook about 1 cup wild rice according to package directions. In the last minute of cooking, add the butter, salt, pepper, walnuts, and cranberries. Mix well, and let sit for a few minutes. Crumble on the goat cheese before serving.
