Start Cooking's How to Cook a Pork Roast

I'm a huge fan of Start Cooking, so I was honored with I was approached to post a recipe an instructional. This is a great instructional on how to cook a pork loin roast from Kathy Maister's Start Cooking website.

This particular recipe is a basic pork loin roast, rubbed with a sort of dried herb pesto. It's baked slow in the oven and comes out succulent and delicious. Personally, I think draping the pork in bacon or proscuitto is a perfect way to do this.

Ingredients:

  • One pork loin roast
  • 1 TBSP various dried herbs
  • 1 TBSP oil
  • 1/2 Tsp. black pepper
  • 1/2 Tsp. salt

Mix the the oil and spices together and rub all over the pork loin.

Set oven to 450 degrees. Put rubbed roast in a roasting pan and cook for 10 minutes at 450. This is an oven-sear to seal in the juices. Now reduce the oven temperature to 250 degrees and roast for 50-80 minutes or until the meat registers 150 degrees internally.

Remove from oven, tent with foil and let rest 15 minutes. (I'm so proud of Kathy for making sure the meat rests. This is such an important step).

Slice and serve.
