Vanilla Fudge Marble Cake

Cake:

  • 3/4 cup butter, softened
  • 2 eggs
  • 2 1/4 cups all purpose flour
  • 1 1/2 Tsp. baking powder
  • 1/2 Tsp. baking soda
  • 1/2 Tsp. salt
  • 1 1/2 cups sugar
  • 2 Tsp. vanilla extract
  • 1 1/4 cups buttermilk
  • 2/3 cup chocolate syrup (I used Quik)

Icing:

  • 1/2 cup semisweet chocolate morsels
  • 2 TBSP butter
  • 1 TBSP corn syrup
  • 1/4 Tsp. vanilla extract

Prep: Preheat oven to 350 degrees. Grease and lightly flour a 10 inch tube pan. Allow eggs and butter to stand at room temperature for 30 minutes. Sift together the flour, baking powder, baking soda, and salt. Set aside.

In a large mixing bowl, beat butter with an electric mixer on low speed for 30 seconds. Add the sugar and vanilla and beat until fluffy. Add the eggs, one at a time, still beating on low speed. Scrape bowl frequently. Alternately add the flour mixture and buttermilk to the mixing bowl. continuing to beat on low speed until all are incorporated and smooth. Reserve 2 cups of the batter and pour the rest into the prepared pan.

Mix the reserved 2 cups of batter with the chocolate syrup. until well combined. Pour over the vanilla batter in the pan.

Bake in the oven at 350 degrees for about 50 minutes. Cool on a wire rack for 15 minutes then remove from pan. Cool completely before adding chocolate icing.

Heat the icing ingredients over medium-low heat and whisk to combine. When everything is just melted, remove from heat and pour over top of cooled cake.
