Bleu Onion Burger on Mexican Bolillo

Ingredients:

  • 1 lb. ground chuck 80/20
  • 1 Tsp. black pepper
  • 1/2 Tsp. salt
  • 1/2 Tsp. Liquid smoke
  • 1 sweet yellow onion, sliced into rounds
  • Bleu cheese crumbles
  • Mexican Bolillo Rolls

Prepare the patties by mixing the ground chuck, salt, pepper, and liquid smoke. Form 3 one-third pound patties. Place in fridge to set.

Fire up the grill to medium-high heat and grill the onion slices until nicely browned on both sides. Remove the burger patties from the fridge and grill to your desired level of doneness.

Brush each bolillo with a little bit of butter and grill for 10-15 seconds over high heat.

Stack your burger.
