MIA Zesty Slaw

This is my recipe for BBQ coleslaw. I was really unhappy with most of the slaw recipes out there, especially ones that include bell pepper. I think the bell pepper is such a bold and harsh flavor, I like my slaw to be of moderate flavor and let the sauce do the robust part. This is the perfect slaw to put on top of pulled pork sandwiches.

  • 1 head green cabbage, shredded
  • 1 large carrot, shredded
  • 1 red onion, shredded
  • 3 ribs celery, shredded
  • 1 cup sugar
  • 1/2 cup yellow mustard
  • 1/2 cup apple cider vinegar
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 Tsp. cayenne pepper
  • 1 Tsp. salt
  • 1 Tsp. black pepper

In a large bowl, combine the shredded vegetables with the sugar. Mix well and set aside. Add the remaining ingredients to a medium saucepan and bring to a boil. Pour over the vegetable mixture, mix well and place in the fridge to chill.

Depending on how much vegetables you were able to shred, you might not need all of the sauce mixture. I like mine to be just slightly moist, not soupy.

Adam, do you use a fine or a coarse shred for your slaw?

Medium coarse for the cabbage and fine for the rest. I cannot stand big chunks of celery.
