Lightning Steaks on the TEC

I received some tenderloin tips in the mail last week from Uruguay Steaks, and I knew the perfect way to cook them: over the TEC infrared burner.* This is my recipe for “lightning steaks.” Your grill will spend more time heating than the steaks are on the grill. The seasoning is simple leaving the divine taste of the meat intact.

Ingredients:

  • 3-4 small tenderloin tips
  • Kosher salt
  • Fresh Ground Black Pepper
  • Canola oil (for lubrication)

Season each steak with a pinch of Kosher salt on each side and a very generous amount of fresh black pepper.

Fire up your Char-Broil/TEC infrared burner to as hot as it will go. I clocked mine at 825 degrees when I put the steaks down. Now, the TEC burner will be red hot, so lube the meat, not the grate with a brush of canola oil.

Grill the steaks for 2 – 2.5 minutes on each side, then remove from the grill and let rest for 2 minutes.

They will come out at a perfect “medium.”

* You don't actually have to have a TEC grill to make lightning steaks. Just heat the grill to as hot as it will go.
