Grilled Pineapple Kebabs
It's funny how some foods just taste awesome by themselves. Grilled pineapple does not need any additions to enhance the taste. Just be sure to use fresh pineapple. Most grocery stores sell fresh cut pineapple in the produce section. Look for it in plastic bags or cylindrical plastic cups.
Slice the pineapple into rings about three-quarters of an inch thick. Then cut the rings into about five to six large pieces. Use the wooden skewers to make kebabs with about 3 to 4 pieces of pineapple per kebab. This will depend on the strength of your skewers.
Fire up the grill for medium-low heat. I like to grill these on lower heat than normal so that it does not burn or stick. Give the kebabs 5 or 6 minutes per side, checking them often to avoid burning. The ideal situation would be to have brown grill marks but not char.
