Bacon Cheddar Tater Tot Casserole

This is the ultimate in decadently salty casseroles. Add the optional Tabasco to give it a great kick in the mouth. You could really be a winner your next potluck dinner with this casserole.
Ingredients
- 2 teaspoons butter
- 2 eggs
- 1.5 cups whole milk
- 1/2 Tsp. Salt
- 1/2 Tsp. black pepper
- 1 Tsp. Tabasco pepper sauce (optional)
- 3 cups cheddar cheese, grated
- 10 strips bacon, fried and crumbled
- 2-pound bag tater tots, thawed (brand of your choice)
Preheat oven to 350 degrees. Grease a 8 by 8 by 2-inch square baking dish with the butter.
In a mixing bowl, whisk the eggs and milk together. Season the mixture with salt and pepper. Add half of the cheddar cheese, the bacon and the tater tots. Mix the mixture thoroughly.
Pour the mixture into the prepared pan and sprinkle the top with the remaining cheese. Place in the oven and bake for 40 to 45 minutes or until the top is golden brown. Remove from oven and let rest for 5 minutes before serving.

Oh man that looks good. Add a couple of eggs to it and you'd have a genuine heart attack on a plate.

Yeah, I'm all about heart attack foods. This was such a tasty dish, but it's better served as a side.

As you're a chilihead, would you have added something else(say like El Yucateco), for an even bigger "kick," or did the Tabasco give you enough heat...?

Oh heck yes. If you like the Yucateco, then go right ahead. Tabasco was fine for me, but I used it mainly for a slight kick and some flavor.
