Nandos Curry Coconut Chicken

Please excuse the crudeness of this picture. I was so hungry when I took it, and I forgot to take multiple shots to cover all bases. Check out the review of Nando's Curry Coconut Cooking Sauce for more information.

Ingredients

  • 2 large boneless, skinless chicken breasts, cubed
  • 1 jar Nando's Curry Coconut Cooking Sauce
  • 3 shallots slices thin
  • 3 cloves garlic, minced
  • 3 TBSP vegetable oil
  • 3 TBSP soy sauce
  • raw peanuts, chopped (for garnish)

Heat the vegetable oil over medium heat in a large skillet. In a bowl, toss the chicken together with the soy sauce and then add straight into the hot skillet. Cook for 3-5 minutes or until you no longer see pink on the chicken. Stir often to prevent sticking. Remove the chicken from the pan.

To the remaining oil and fat, add the garlic and shallots and saute until they become translucent. Return the chicken to the pan and add the Nando's. Stir all well to combine.

Cover and simmer for 20 minutes. Serve over rice and top with the chopped peanuts.

So how did you like it? Nando's Peri-Peri sauce is fast becoming my favorite hot sauce, but I haven't tried their spices, marinades or cooking sauces yet.
