Nandos Curry Coconut Chicken

Heat the vegetable oil over medium heat in a large skillet. In a bowl, toss the chicken together with the soy sauce and then add straight into the hot skillet. Cook for 3-5 minutes or until you no longer see pink on the chicken. Stir often to prevent sticking. Remove the chicken from the pan. To the remaining oil and fat, add the garlic and shallots and saute until they become translucent. Return the chicken to the pan and add the Nando's. Stir all well to combine. Cover and simmer for 20 minutes. Serve over rice and top with the chopped peanuts. |
