Guiness Pub Cake
This recipe comes from The Baking Sheet, a newsletter-style publication put out by the King Arthur Flour Company.

Ingredients:
- 1 cup Guiness stout
- 1 cup raisins
- 1 cup dried cranberries
- 1 stick butter
- 1 cup brown sugar
- 3 eggs
- 2 1/4 cups all-purpose flour
- 1 1/2 Tsp. baking powder
- 1/2 Tsp. baking soda
- 1 Tsp. salt
- 1/2 Tsp. cinnamon
- 1/4 Tsp. nutmeg
- 1/4 Tsp. allspice
- Powdered sugar for dusting
Preheat oven to 350 degrees. Place the raisins in a medium bowl and pour the beer on top of them. Set aside to soak. Grease a square 8 inch deep cake pan. In a medium-large bowl, sift together the flour, baking powder, baking soda, salt, and spices.
In a large bowl, cream together the butter and sugar until light and fluffy. One at a time, beat in the eggs. Mix in half of the flour mixture, stopping to scrape the sides of the bowl. Then mix in the beer and soaked fruit. Finally, mix the remaining flour mixture. Combine until evenly moistened, scraping the sides of the bowl as needed.
Pour the batter into the prepared pan and bake for 45-50 minutes.

You should serve that with the new Black and Tan ice cream from Ben & Jerry's.
Sounds like it would be realll good. We'll have to try that one at home next time we're in the mood for something sweet.
I already like to drink guiness now I can have my guiness and eat it too...you know I am baking this one. All humor aside, this really sounds delicious I will definitely give this a try.
