Risotto: The Sexiest Rice You'll Ever Make

The following is my recipe for making a basic risotto. You should see (and hear) TheWife get all excited when she hears mention of the risotto. Her voice goes up about 3 octaves, and she makes yummy sounds. Risotto is a creamy rice dish that will leave you in heavenly wonder. My suggestion for you is to make this for your loved on on Valentine's Day.
Ingredients
- 1 cup Risotto, or Arborio, rice
- 3 cups chicken broth
- 1/2 cup chopped white onion
- 3/4 cup dry white wine
- 3-4 TBSP Olive Oil
- 2 TBSP butter
- 1/2 cup grated parmesan or gruyere cheese
- Pinch of salt
In a large skillet, heat the olive oil over medium heat. Add the onions and the salt and sweat the onions for about 2 minutes. Add the rice and stir through. Cook over medium heat until the rice begins to turn translucent or the skillet begins to crackle slightly. You may have to back off on the heat a bit, as you do not want the rice to brown.
Add the wine and continue cooking until it is all absorbed. Now's the time to settle in for the Risotto dance. You do not want to walk away at this point.
Back the heat down to medium-low. Begin adding the broth a ladle-full at a time. Stir often until each bit of broth is absorbed. Continue with this procedure until you are out of broth. The whole process will take about 20 minutes.
When the final bit of broth is absorbed, add the butter and stir until melted. Then add the cheese and mix through. Serve immediately.

You get a gold star for this recipe! Not many people want to take the time to make a proper risotto these days, and the *instant* risotto from a box just doesn’t compare to the real thing. I’ll keep this lovely dish in mind on February 14! Cheers!
I LOVE risotto. I have a recipe similar to this except I also add a few porcine mushrooms. My favorite risotto has shrimp and a cup of cream in it and boy is it yummy.
You are so correct, there's no better way to say "I love you," than with a big pot of creamy, comforting risotto!
