Grilled Garlic and Rosemary Bruschettas
This is an original recipe by me. I've been in a serious grilling mood lately, so whipped out some appetizers for the wife this weekend. This is a quick and easy thing you can do, if you're grilling and want to add some extra oomph to your meal. Just slice up a baguette on the diagnoal and add some stuff to the top. Really easy, and you're guests/wife/girlfriend/in-laws will think you're a god.

- 1 French baguette
- 5 cloves garlic
- 1 Tsp. minced fresh rosemary
- 2 TBSP olive oil in all
- pinch salt
- grind of black pepper
- 1/3 cup grated parmesan cheese.
Slice about 10 slices of the baguette about 1/4 inch thick. Brush the bottoms with olive oil.
Mince the garlic and rosemary. Mixe them into one 1 tablespoon of olive oil, and add a pinch of salt. Using a spoon, mix well, and mash the garlic slightly. Spread a small amount on each slice of baguette, then sprinkle with the parmesan cheese. Top with a grind or two of black pepper.
Fire up your gas grill on one side. Put the slices on the unlit half of the grill and "bake" for a few minutes, or until the parmesan starts to melt. Then transfer the slices to the lit part of the grill and toast the bottoms. Remove before they start to burn.
