Rice Pudding with Golden Raisins

Pudding. It's soulfood in my opinion. Now, I'm not talking about those little brown cups you can get in the dairy case at the grocery store. No, Bill Cosby will not be hawking any Jell-o Pudding snacks in my directions. I like my pudding hot, steaming hot, the way it should be. And in this case, rice pudding is a food that can reach down into the core of your soul and warm it up. This particular version, I based on a Jamie Oliver recipe from his Jamie's Kitchen Cookbook. I added a few twists and simplified it for the masses.

Ingredients
- 5 oz. uncooked white rice (by weight)
- 2 pints milk
- 1/2 Tsp. Vanilla extract
- 7 TBSP Butter
- 1/3 cup sugar
- Tiny pinch of ground nutmeg
- 1/4 cup golden raisins

In a medium saucepan, combine the rice, milk, butter, vanilla, nutmeg and sugar. Bring the mixture up to a gentle simmer over medium-high heat. Reduce heat to low, and simmer uncovered until the mixture is thick and pudding-like. About 1 minute before you take it off the heat, add the raisins to heat them through. Serve hot.
