Sweet and Spicy Chicken Salad Sandwiches

This is my submission for this weeks Carnival of the Recipes, featuring food to go. There should be a lot of great recipes for travel food this week. I am constantly amazed at the amount of talented cooks out there in the blogosphere. My mother used to put apple pieces in my tuna salad when I was in grade school. I loved those days. And now, I have added a kick of my own ... some hot sauce.

Chicken Salad Sandwiches

Ingredients
- 1 10-oz. can chicken, drained
- 2 TBSP sweet pickle relish
- 3 TBSP Real Mayonnaise
- 1 Tsp dijon mustard
- 1 Tsp. honey
- 2 TBSP pecans, chopped fine
- 2-3 slices granny smith apple, chopped
- 1 Tsp. of your favorite hot sauce
- dash or two of pepper
- 1 loaf of french bread

Mix all the ingredients except bread together in a bowl, cover, and let sit in the fridge. Slice the bread lengthwise down the middle, like they do at Subway. Spoon the chicken salad on the bottom slice and place the top slice on top. From here, you can either wrap in in plastic and take it to your outing then cut it there or you can cut it now and wrap the individual pieces.

I cut it into 5 pieces and wrapped them. This is perfect for taking in coolers for picnics, games, or road trips.
