Recipe: Spicy Breakfast Stir Fry

It's not the prettiest dish in the world, but it sure is damn tasty. We like things hot in our house, as you may have already known. For this recipe, I chose to put in a single Jalapeno pepper, a choice that would come to regret later. Just be careful how much and what kind of peppers you use in this recipe, because right now, at this very moment, I am suffering. That little green fellow must have been hopped up on crack.

TheWife and I had this for dinner one night, but lamented the fact that we didn’t have any tortillas. It would have been great as breakfast tacos.

Ingredients
- 1/2 lb. breakfast sausage
- 1 cup chopped onion
- 1/4 cup chopped green bell pepper
- 1 jalapeno pepper, diced fine
- 1/3 bag frozen hash browns
- 6 eggs, beaten
- salt
- oil

In a large skillet, brown the sausage, then remove to a paper towel. In the same skillet, add some oil, then toss in the onions and peppers. Fry until very soft and translucent.

Add the hash browns and spread them out to a single layer. Cover the skillet and cook for 6 minutes. Stir, then cover again and cook for another 6 minutes.

Return the sausage to the skillet and stir. Add the beaten eggs and cook until the eggs are set. Stir through to make a nice hash. Serve in tortillas or straight up on a plate.
