I've been accepted as a contributor to a food site called Kitchen Fun. After a few weeks of doing nothing there (thanks very much, Influenza) I finally posted a recipe. It's a quick and easy frittata recipe that I created on the fly while trying to figure out how to feed myself and my mom in a hurry.
A frittata is kind of like an omelette, but it is not flipped or turned. You finished the egg setting in the oven and then cut it into wedges and serve.
