Binder Recipe: The Hominy

This is a recipe I found in the binders that I liked and wanted to play with. I like to consider this a recipe as a base that you can play with and do what you want with. In fact, my mother told me she used to make this at home and added all kinds of stuff to suit her likes. I'd have to say that the base recipe is rather bland. In my version, I added some Special Shit Seasoning, chipotle peppers and parmesan cheese to boost the flavor to my level. And then, of course, I put hot sauce on my portion after I spooned it into my bowl.

Ingredients
- 1 lb. Ground round
- 1 can yellow hominy, drained
- 1/2 lb. cheese
- Green onions, choppped
- salt and pepper

Preheat oven to 350 degrees Fahrenheit. In a skillet, brown the meat and drain. Line the bottom of a medium casserole dish with the hominy and sprinkle with salt and pepper. Add the meat on top of the hominy in an even layer. Sprinkle the top of the casserole with onions and cheese.

Bake in the oven for 15 minutes. Remove and let cool for 5 minutes.
