Chipotle Skillet Taters

As heard on the Men in Aprons Podcast, this is the official "Skillet Taters" recipe. Rock on.

- 3-4 Medium baking potatoes
- 1 Small white onion
- 2 Cloves Garlic
- Tabasco Chipotle Sauce
- 2-3 TBSP Olive oil

Pre-prep Prep: Peel the potatoes and cut them into 1/2 inch chunks. Finely chop the onion. Mince the garlic.

In a wide non-stick skillet, heat the oil over medium heat. Add the onion and garlic. Fry for about 5 minutes. Add the potatoes and cook aggressively for a few minutes and stir every now and then. Reduce heat to medium low and cook for a while. This may take about 20 minutes.

You want to cook it kind of slow and stir often so that a nice brown crust is formed on the potatoes. Once that's done, just keep cooking until the taters are done all the way through. Add the chipotle sauce about 5 minutes before taking them off the stove.
