Mountain Man's Breakfast
Originally born as a use-up-the-last-of-the-crap-in-the-pantry recipe, the Mountain Man's breakfast eventually became a great hangover remedy for Sunday mornings. We called the American Heart Association about this recipe, but they have yet to return our calls. This was one of the first recipes I ever posted online over at de.liscious.
Ingredients:
- 1/2 log of ground sausage
- 2 large slices deli ham
- 2 eggs
- 1/2 onion, minced
- 1 can black beans or pinto beans
- Flour tortillas
- Cheez Whiz, warmed in microwave
- Assortment of gut-burning condiments such as Tabasco, picante sauce, salsa, pickled jalapenos, or pico de gallo
In a small pot, heat the beans as instructed on can. In a large skillet, saute onions in some oil. Add ground sausage and brown. Remove sausage/onion mixture and set aside. DO NOT drain grease. Keeping skillet very hot, fry the deli ham and brown on both sides. Crack the eggs on top of the ham and cover the skillet to cook the eggs through.
Prepare your plate: tortilla on bottom, then add the ham/egg, sprinkle the sausage/onion mixture, then sprinkle desired amount of beans, top with cheese whiz and your choice of hot sauce. The tortilla will probably NOT roll up, so don't even try. Just use a knife and fork.
