Grilled PizzaThis is my second batch of pizza this weekend. The first batch was beautiful. I made one pepperoni and one canadian bacon and pineapple. The pictures were beautiful. Then my camera's flash card decided to eat all the pictures. Corrupt Data. All gone. So these pics are the second batch from Sunday afternoon.
- 8" ready-made pizza crusts Lay out the crusts and spread 2-3 heaping spoonfuls of sauce all around, leaving a 1/2 crust edge. Sprinkle on a couple of handfuls of grated cheese. Add toppings. I used the gas grill to make these. It's a three burner grill, so I fired up 2 of the burners to high, and left the third off. Heat the grill up 'till it reaches about 400. Then put the pizzas on the unlit burner. "Bake" them for 12 minutes. When it's cooked and the cheese is melty and bubbly, put them over the burner for a minute to toast the bottom of the crust.

Yes, please do that! And take pictures and post them. I'd like to see how they turn out.

I've been meaning to blog on grilled pizza, and it looks like I'll have to soon now! Trader Joe's makes great pizza dough that's cheap and easy to use, if someone doesn't want to make their own. What we like about grilled pizza is that you can have your guests help by rolling out their own dough and getting their own ingredients. I like to grill without a stone, then move the dough to the smoker to have sauces and ingredients added. I like to use different stuff... Pulled pork with barbecue sauce and grilled oninons, balsamic vinegar reduction with smoked chicken, fresh tomatoes and fresh mozz... All good stuff!

Yeah, I plan on having a grilled pizza party. I'll buy a whole stack of crusts, sauce, and cheese, and just bring a lot of toppings. Let people decided what they want, and cook it up. Those 8" crusts are the perfect size for a single person.
