Dirty Rice

I don't know how else to classify dirty rice other than "Soulfood." It's what's good for the soul. Dirty rice is a very southern dish, most common in Louisiana and Alabama. If you've ever eaten at a Popeye's Chicken restaurant, then you have probably seen it on the menu. But I doubt that Popeyes actually cooks dirty rice the traiditional way. The way that dirty rice gets dirty is from ground up chicken livers and gizzards. The alternative method to get it dirty is to use ground beef.

Ingredients
  • 2 cups cooked long grain rice
  • 1/2 lb. ground beef
  • 1/2 cup chopped onion
  • 1/4 cup chopped green onion (with some of the green)
  • 1/2 Tsp. Tabasco pepper sauce
  • 2 TBSP minced garlic
  • 1-2 TBSP olive oil

Instructions
Cook the rice according to the package instructions. I use the basic 1 cup uncooked to 2 cups water method.

In a large skillet, brown the ground beef, breaking it into itsy-bitsy pieces while browning. Drain off excess grease, but leave some for the flavor. Add the onion, garlic, green onion, and olive oil. Cook until the onion is soft. Add the rice and Tabasco and stir to combine.

Taste and season with Salt and pepper.
