Nando's Chicken with Apricot Sauce

Nandos Sweet ApricotI had the pleasure of trying out and reviewing a couple of new cooking/grilling sauces from Nando's. This one is called Sweet Apricot Cooking and Grilling Sauce. The whole point really is the Peri-Peri peppers since I am reviewing it for Hot Sauce Blog. But the sauce was tasty. It was sweet, with a hint of salt and onion. TheWife and I enjoyed it as a quick way to cook up a tasty chicken dish to put over rice. It reminded me of sweet and sour chicken from Magic Wok.

The recipe is taken off the label with a few modifications. I like to marinate my chicken in a little soy before making something like this. I know that this Nando's sauce isn't marketed as an Asian type product, but it just seemed like the dish was headed that way. Also, here's an interesting fact that you didn't know about me. I love to use chopsticks to eat. And I also love sushi. Didn't expect that from the manly man, didja?

Ingredients
- 3 boneless skinless chicken breasts, cubed
- 1 jar Nando's Sweet Apricot Sauce (medium heat)
- 2 Tsp. Soy Sauce
- 2 TBSP oil
- rice

Cube the chicken and add the soy sauce. Marinated in the fridge for 30 minutes. Heat the oil over medium-high heat in a large skillet. Add the chicken and brown. Pour in the sauce, reduce heat, and cook for 15-20 minutes, or until the sauce begins to thicken.

Serve over rice.
