Nando's Chicken with Apricot Sauce

The recipe is taken off the label with a few modifications. I like to marinate my chicken in a little soy before making something like this. I know that this Nando's sauce isn't marketed as an Asian type product, but it just seemed like the dish was headed that way. Also, here's an interesting fact that you didn't know about me. I love to use chopsticks to eat. And I also love sushi. Didn't expect that from the manly man, didja? Ingredients Cube the chicken and add the soy sauce. Marinated in the fridge for 30 minutes. Heat the oil over medium-high heat in a large skillet. Add the chicken and brown. Pour in the sauce, reduce heat, and cook for 15-20 minutes, or until the sauce begins to thicken. Serve over rice.
