Spiced Hominy

I was baking some chicken tortilla verde in the oven and needed a quick side dish to go with it. Putting on my quick-thinking cap, I pulled out a can of yellow hominy, a half of a white onion, a red bell pepper, and got to work. I think it turned out just fine, considering my complete and total improvisation. Unfortunately, I was unable to get a picture of it. Got the dreaded "Change Battery Pack" message.

HominyIngredients
- 1 can yellow hominy, drained
- 1/2 small white onion, chopped
- 1/4 cup chopped red bell pepper
- 1/8 Tsp chili powder
- pinch of ground cayenne pepper
- pinh or two of salt
- 2 TBSP olive oil

Prep: drain the hominy, chop the onion and pepper. Heat the oil over medium heat in a skillet.

When the skillet is really hot, add the onion and pepper. Fry until the pepper is soft. Add the hominy and stir. Keep frying until the hominy is soft or it begins to pop. Add the remaining ingredients and cookin for an additional couple of minutes.
