Tropical Rice

I grilled some Beef and Pineapple Kabobs tonight and needed a light and tasty side dish to go with them. Did you know that you can find any recipe on the internet, and probably 10 different variations thereof? Well I searched on "Hawaiin Rice" and got a million hits, including a lot on cooks.com. As usual, I mixed and matched the ones I thought were good and the ones that I actually had the ingredients for. It just so happened that I had fresh cut pineapple in the house that I needed to use up. So I minced it very fine to get that canned "crushed pineapple" style.

Ingredients
- 1 cup uncooked rice
- 3/4 cup crushed pineapple
- 1/2 cup sugar
- 1 TBSP lemon juice
- 1/4 cup chopped pecans
- 1/4 cup minced onions
- 2 TBSP butter

Cook the rice according to the package instructions. Set aside.

In a small skillet or saucepan, melt the butter over medium heat. Add the onion and cook until very soft. Reduce heat slightly, then add the remaining ingredients. Cook until the mixture reduces and thickens. Gently fold into the rice and stir well.

Top with freshly chopped pecans.
