Recipe: Chipotle Hominy Hash
This is my test version of The Hominy as written in The Binders. Doesn't that sound cryptic? Just check out that link and then the description of The Binders for a complete explanation. I gave this recipe a swift kick in the pants with the addition of minced chipotle peppers and the special shit seasoning. Hell, just adding the seasoning sent The Hominy into outer space. One thing I might suggest is that you put four ounces of cheese throughout the meat layer, or at least under the meat layer. My variation here made a crusty, stringy cheese layer that didn't incorporate well. Ingredients Preheat oven to 350 degrees Fahrenheit. In a skillet, brown the meat, season with the Special Shit while browning, drain. Add the chipotle chiles and mushrooms. Cook through. Line the bottom of a medium casserole dish with the hominy and sprinkle with salt and pepper. Add the meat mixture on top of the hominy in an even layer. Sprinkle the top of the casserole with onions and cheese. Bake in the oven for 15 minutes. Remove and let cool for 5 minutes. |
