The Forty-Five Turn Flip

Sounds like a dance move, doesn't it? The forty-five flip! Do the hustle! But no, the forty-five flip is a grilling maneuver that you can learn to impress your guests. Once you have a bead on how your grill and grates react under the heat of the charcoals (or gas), it is now time for you to implement the forty-five flip.

Step 1: place your steaks on the grill at a 45 degree angle in relation to the direction of the grill grates.

Step 2: Wait 2-3 minutes. Turn (don't flip) the steaks 45 degrees in the opposite direction. Wait 2-3 minutes.

Step 3: Flip the steaks over. Repeat Steps 1-2. Remove to a plate or to cooler part of the grill to finish cooking.

Please note that this technique does not work well with thin cuts of meat. By the time you got done with the second forty-five, you'd have a very crisp side of meat, and then the other two turns would cost you the dinner. Make sure you use this method on 3/4 to 1-inch thick cuts of meat ... minimum.

And why all this fuss? Because diamond shapes are better than square.
