Ten-Mile Island Dressing

I received an email from the owners of Big Daddy Jake's Hot Sauces, and they said they loved my review on the Hot Sauce Blog and would like to use this recipe in their forthcoming Cookbook. I was blown away. Of all the stuff I cook and come up with, the quickest and most off-the-cuff recipe gets the attention. So here goes. You can use this as a spread for your sandwiches or thin it out with some oil for salad dressing.

Ingredients:
- 3 parts real mayonnaise
- 1 part Big Daddy Jake's Texas Pit Smoked Hot Sauce
- Canola Oil (optional)
- lemon juice (optional)

Whisk together the mayo and the hot sauce and you are done. If you want to use this as a salad dressing, add some canola oil and a little bit of lemon juice, and slowly and whisk together.

Notes: If you can't get your hands on Big Daddy Jake's, just use another smoked or chipotle-style hot sauce. Do not use Picante or Salsa. Also, you'll want to use really spicy stuff. Otherwise the whole Ten-Mile Island monniker does not fit.
