Ultimate White Trash Gourmet Grilled cheese, V 2.0

Category: Southern Faire Okay, seems lots of people liked the ultimate white trash gourmet grilled cheese sammich but of course, I knew that the Missus couldn't leave well enuff alone. So tonight, I decide to make the sammiches again, and she proceeds to add a new wrinkle to it. Ordinarily, this would piss me off, but it turns out she wasn't far wrong. First off, she wants to add sauer kraut. This bein' a furrin concept I was skeptical; but I do like the occasional Reuben sammich myself. So I humored her and added the kraut just before the second layer of cheese. Next she tells me the onions wuz too sweet, which probly means she don't like them as caramelized as I do. Fair enough. So I don't cook 'em as long. Presto. The Ultimate White Trash Gourment Grilled Reuben Cheese Sammich. Have to admit, it was darn good, but gimme an extra slice of fried baloney. Just remember to season the onions with salt & pepper DURING the cooking. Intensifies the flavor. k. Comments
