This is the easiest way to peel your tomatoes without destroying the meat underneath by cutting or endless pulling and tearing. It's the score-blanch-peel method. Do not skip the ice bath step. This stops the cooking process.
- Score each tomato by cutting two 'X' marks into the skin on each end.
- Drop tomatoes into rapidly boiling water for 30-45 seconds, no more.
- Remove tomatoes to an ice water bath. Cool for a minute
- Easily peel away the skin at the X's. The tomatoes are now yours to do your culinary bidding
