Onions & Shrooms

Category: Veggies & Sides If I had steak or pork chops every night, this dish might adorn it every night. This is such an easy and very delicious side to make, you'll thank me for for it.
Get out your widest nonstick skillet and set it over medium heat. Add the olive oil and heat it up 'till it ripples. Throw in the onions and immediately turn the heat down to medium low. Cook the onions until they just start to caramelize (turn brown). Add the broth and cover. Cook on low for about 20 minutes or until the onions are very soft and have taken on a khaki color. Add the shrooms and recover. Cook until shrooms are very soft. If need be, add some more broth if the mixture is too dry. When the shrooms are soft, uncover and turn the heat back up. Add the butter and stir until melted. Continue to cook until all is kosher. Add salt to taste. Serve over steaks or pork chops. Can even be served on the side or over rice. |
